This is an updated version of my Instant Pot Day-After-Thanksgiving Turkey Tortellini Soup, using my Instant ... Put the rotisserie chicken carcass into an Instant Pot or other pressure cooker.

remove the turkey carcass (reserving any excess turkey meat if you want to add it to your soup, like me), and strain and reserve the stock. Transfer it back to the pot, and bring to a simmer.
