Shank or shin is usually the preferred cut for Taiwanese beef noodle soup, and can work for other similar braised dishes like Chinese red cooked beef.

Also, Osso bucco means 'hollowed bone' which refers to the marrow-filled shin bone that the dish is made from. So it really doesn't matter what meat it is made from as long it is the shank. The meat dept guy told me I could just pan fry it, but every recipe I have found online involves a long and complicated braising process with multiple vegetables. I just want to cook this thing and have it taste good enough to eat w/ some collards on the side (or any other veggie).

2021年3月10日 · Shin/shank meat doesn’t have fully as much of those tissues and bones as oxtails. But it does still have a lot and along with short ribs is definitely one of the best substitutions for oxtails. But since it has slightly less of that tissue and bone, it can l produce slight less flavor and less of that luscious mouthfeel compared to oxtails.

2023年10月2日 · I made it with beef shank once and it came out really really tough. I was using a veal recipe and it said to cook for only 2-3 hours; apparently with adult beef you need to cook it WAAY longer (more like 6-8 hours) to break it down, but supposedly then it will turn out good!
