Jan 10, 2023 · Amateur cook here. Always hated the taste of beef but after being recommended many steak videos on YouTube, I wanted to give beef one more chance by pan searing a steak. Since I’m a broke boi, all could afford was a shank piece around 1.5-2” thick. Is there any way to eat this tough meat without needing to stew or soup it?

Shank or shin is usually the preferred cut for Taiwanese beef noodle soup, and can work for other similar braised dishes like Chinese red cooked beef.

But it does still have a lot and along with short ribs is definitely one of the best substitutions for oxtails. But since it has slightly less of that tissue and bone, it can l produce slight less flavor and less of that luscious mouthfeel compared to oxtails.
