The steel defenders damage isn't great enough to demand every turn and you don't get enough smites to do it every round. The homunculus returns to life with all its hit points restored. You can create a new homunculus after a long rest, killing the old one. You can revive an existing, recently dead homunculus with an action and a spell slot. But it's the same homunculus, so it won't have any new uses of Alchemical Salve.
